As our Chef de Partie, you’ll take ownership of your section, keeping standards high, the pace moving and every plate leaving the kitchen exactly as it should.

You’re hands-on, organised and passionate about food — someone who knows that great dishes come from great ingredients, strong teamwork and attention to detail.

You don’t just cook — you help create the Mama experience, one plate at a time.

HERE’S WHAT YOU’LL BE RESPONSIBLE FOR

👨‍🍳 Your Section, Your Kitchen

• Take responsibility for your assigned section and ensure smooth day-to-day operations.
• Prepare and cook dishes consistently to Mama’s recipes, presentation and quality standards.
• Maintain strong mise en place and ensure your section is fully prepared for service.

🔥 Service Champion

• Work efficiently during busy service periods while maintaining quality and consistency.
• Ensure dishes are prepared and delivered within the required timeframes.
• Communicate clearly with the Sous Chef, Chef de Cuisine and wider kitchen team.

✨ Quality & Presentation

• Follow recipes, portion controls and presentation standards.
• Maintain high standards of taste, freshness, temperature and presentation.
• Ensure all food is handled and stored correctly.

🧼 Hygiene & Safety Guardian

• Maintain a clean, organised and safe workstation at all times.
• Follow HACCP, food safety, hygiene and health & safety procedures.
• Ensure equipment and work areas are cleaned and maintained throughout service.

📦 Stock & Cost Conscious

• Monitor ingredients and stock levels within your section.
• Minimise waste through proper preparation, storage and portion control.
• Report shortages, quality issues or wastage to the relevant chef.

🤝 Team Player

• Support colleagues across the kitchen when required.
• Help train and guide Commis Chefs and junior team members.
• Contribute to a positive, respectful and collaborative kitchen culture.

MADE FOR YOU… ONLY IF ✨

• You have previous experience as a Chef de Partie or in a similar kitchen role.
• You have strong knowledge of your section and solid culinary fundamentals.
• You’re organised, disciplined and able to work calmly under pressure.
• You care about quality, consistency and presentation.
• You understand food safety, hygiene and HACCP standards.
• You’re a team player who communicates well and is happy to support others.
• You’re hands-on, reliable and take pride in what you put on the plate.
• You’re comfortable working in a fast-paced, high-energy environment.

YOUR LITTLE EXTRAS 🎯

• Experience in a lifestyle, luxury, casual dining or design-led hotel/restaurant.
• Pre-opening experience? Big plus. 🏗️✨
• Experience working across different cuisines or high-volume operations.
• A genuine passion for food, creativity and hospitality.

WORK AUTHORISATION 🌍

• Applicants must already hold valid work rights/work authorisation for South Africa. Visa sponsorship is not available for this position. Candidates must be legally eligible to work in the country where the role is based.
