Profesional responsable de la dirección integral de la cocina central y de las operaciones culinarias realizadas en las unidades de los clientes, asegurando excelencia gastronómica, eficiencia operativa, inocuidad alimentaria, desarrollo del personal y control de costos. Será responsable de las áreas de carnicería, panadería, pastelería, cocina caliente, cocina fría y despacho de la cocina central, así como del soporte y supervisión de las operaciones in situ en los clientes, donde una parte relevante de la producción se ejecuta localmente.
Este profesional deberá garantizar la estandarización de procesos, la consistencia de la calidad, el cumplimiento de las fichas técnicas y la integración eficiente entre producción central y producción local. Actuará directamente en el desarrollo de menús con enfoque en costo-beneficio, calidad, aceptación del cliente y viabilidad operativa, con dominio de cocina internacional y cocina local costarricense.
También será responsable de liderar y desarrollar equipos, fortalecer la cultura operativa, implementar prácticas de mejora continua y asegurar cumplimiento con HACCP, buenas prácticas de manipulación, 5S y Lean. Se espera una fuerte capacidad de gestión, presencia en campo, visión sistémica, disciplina de ejecución y habilidad para actuar en un entorno de alta demanda, múltiples unidades y relación constante con clientes.
Formación
· Formación en Gastronomía, Producción de Alimentos, Administración de Servicios de Alimentación o áreas afines
· Especializaciones en inocuidad alimentaria, gestión operativa o liderazgo serán un diferencial
Experiencia
· Experiencia sólida en alimentación colectiva/industrial
· Experiencia previa en posición de liderazgo senior en cocina industrial, catering, food service, Hoteles y Resorts de grande volumen.
· Vivencia práctica en cocina central y operaciones descentralizadas
· Historial consistente en gestión de personas
· Experiencia comprobada en desarrollo de menús con enfoque en costo-beneficio
· Experiencia en auditorías sanitarias e implantación de estándares
· Experiencia en ambientes de alto volumen, presión y múltiples clientes
Idiomas
· Español indispensable para actuación local
· Inglés será un diferencial
