Job Description
The Production team member assists with the production team in complete processing and manufacturing of pizza dough. Team Members are required to rotate to various positions (dough maker, dough placer, tray washer, and cross/down stacker) throughout the shift.
The Production team member also cleans and sanitizes production equipment and area, and cleans and maintains the building/facility. The Team Member assists in production and warehouse as needed. This Team Member is expected to work in a safe manner at all times.
(8%) Performs batch setup and mixing of dough production process
Set up production area prior to making dough
Sanitize line prior to production, calibrate scale and thermometer
Determine correct batch recipe –gather, measure and mix ingredients
Ensure dough is delivered into rounder
Record batch data and maintain proofing library
Achieve and maintain dough certification
(8%) Remove dough balls from rounder conveyor belt, and place into dough tray
Lift and place dough balls into tray using placing template
Perform weight check of dough balls for quality control – approximately once per batch
(8%) Stacks filled dough trays and prepares for shipment
Remove trays from conveyor belt as they enter cooler, and stack onto dolly alternating direction of the trays
Push or pull dough tray as dough temperature reaches target level
Down stack trays as dough temperature reaches target level
Rotate down stacked trays in cooler
(12%) Pre-soak and scrape
Transport returned dough trays to waste site and manually scrap trays free of dough
Manually pre-soak trays to aid in the removal of dried dough during tray washing
Scrape off coloured dough tags on ends of used trays
Transport used trays to washing area to be cleaned
(8%) Load tray washer by placing soiled trays into tray wash machine
Monitor gauges and settings to insure water pressure, water temperature and detergent levels consistently meet company standards determined to thoroughly clean and sanitize tray
Feed trays through at an acceptable pace to match the dough production and placing area
(20%) Disassemble, clean and sanitize production equipment
Clean and sanitize divider, mixer, mixing bowl, rounder and belts
Clean tray washer as specified by company guidelines
Keep maintenance and sanitation logs
(5%) Reassemble production equipment
Reassemble divider and hoses
(27%) Performs general cleaning tasks in production area
Clean silo bin
Ensure production floor is swept and walls are cleaned
Empty all dough waste containers
(4%) Other duties as assigned
Assist in production and warehouse as needed – tray wash, dough placer, dough maker, cross stacker, down stacker and receiving
Qualifications
High School Diploma or GED
One year of production or manufacturing experience
Available to work flexible shifts which may be anytime during the 24 hour day, over and 7 days in the week
Ability to stand, climb and walk on a continual basis throughout the shift
Ability to lift from floor to above the head, and to carry materials weight up to 50lbs. on a frequent basis, and up to 75lbs. on an occasional basis throughout the work shift
At times, prolonged and frequent walking over short distances (<500ft.)
Ability to balance on ladders and on top of platforms and equipment
Ability to work in production environment with constant exposure to loud machinery and vibration exposure with the use of power tools
Ability to work in extreme temperatures, both indoors and outdoors
Ability to read and interpret production process materials, dough thermometer, gauges and record data
Strong attention to detail
