Au sein de l’équipe de cuisine, le.la responsable économe est garant.e de l’approvisionnement et de la gestion physique et comptable des stocks de l’établissement : commandes, réception et vérification de la conformité. Il.elle travaille en lien avec le chef de cuisine et le directeur d’exploitation.
Garantir la gestion des inventaires et les clôtures de fin de mois
Gérer les litiges avec les fournisseurs
Evaluer les propositions des fournisseurs et participer à l'optimisation des ratios marchandises
Contrôler la qualité et la conformité des marchandises
Suivre les contrats (qualité, délais, livraison, paiement) en lien avec les différents intervenants (fournisseurs, autres services internes).
Effectuer les commandes dans l’ERP
Connaître toutes les procédures d'hygiène et les normes HACCP en vigueur
Connaître les normes de qualité du groupe Paris-Society.
Connaître l'organisation générale de la cuisine.
Avoir de solides connaissances en matière de gestion et de comptabilité.
