Le Louise Hotel Brussels 5*, premier hôtel MGallery de Belgique, recherche son/sa futur/e stagiaire en cuisine.
Vous avez envie d'y mettre votre grain de sel pour que nos clients vivent une expérience singulière ? Venez mettre la main à la pâte et intégrez une équipe œuvrant autour d’un Chef renommé et ambitieux ; qui propose une offre de restauration innovante, créative et d’un très haut niveau de qualité.
Vous contribuez au bon déroulement du service et à la qualité de la production. Vous participez à la production des plats conformément aux fiches techniques. Vous établissez de bonnes relations avec les autres services de l'hôtel. Vous veillez à la propreté de votre lieu de travail et à la sécurité alimentaire en respectant les règles d'hygiène HACCP. Vous contribuez à la bonne gestion des matières premières.
Vous avez envie d’une expérience à 360° ? En plus du restaurant, vous pourrez également être amené à exercer vos talents pour assurer les services pour les banquets, le room service ou encore le petit déjeuner.
Le stage est à pourvoir dès maintenant pour une durée de 3 à 6 mois.
Selon votre niveau, vous pourrez être amené(e) à :
1. Avant le service :
- réaliser la mise en place de tous les aliments chauds et froids
- cuire la viande, les poissons et la volaille; préparer les sauces
- exécuter les préparations pour banquets ou buffets
2. Pendant le service :
- préparer et achever les mets suivant la commande; respecter le planning/temps, la recette, la méthode de travail et l'organisation du travail
- disposer et garnir les aliments sur assiettes ou plats et les placer au bain-marie, respecter les portions des différents composants des repas
- veiller à l'utilisation optimale des matières premières, présentation, goût et qualité
3. Après le service :
- débarrasser la cuisine
- contrôler et traiter les restes de nourriture
- assurer l' entreposage et la conservation hygiénique des denrées alimentaires
- maintenir l'ordre et la propreté dans les frigos et surgélateurs
- nettoyer le lieu et les instruments de travail
- assurer l'ordre, la netteté et la sécurité dans la cuisine
- respecter les normes de sécurité et d'hygiène
