Como Chef Ejecutivo, serás responsable de liderar las operaciones culinarias, conceptos de comida para bares en general y catering VIP de alta gama.
Supervisando al personal de cocina, responsable de desarrollar e implementar soluciones culinarias para cumplir con los estándares de producción, presentación y servicio.
- Garantizar que se implementen los estándares y técnicas culinarias adecuados para la preparación de alimentos, incluyendo los estándares de producción, presentación y servicio.
- Capacitar y gestionar al personal de cocina para que utilice las mejores prácticas en la producción de alimentos.
- Responsable de cumplir con los objetivos de coste de materias primas y de mano de obra.
- Desarrollo y escandallo de recetas apropiadas para cada servicio.
- Responsable de mantener siempre la calidad y la seguridad de los alimentos.
- Garantizar el funcionamiento y el mantenimiento adecuados de los equipos. Garantizar el cumplimiento de los estándares de alimentos SAFE y de Garantía de Calidad de Aramark, así como de las políticas de seguridad.
Requisitos:
- Se valora título universitario en cocina o equivalente, con más de 5 años de experiencia culinaria en un puesto similar.
- Imprescindible la experiencia previa en eventos especiales de gran volumen (centros de convenciones, palacios de congresos, hoteles, estadios, empresas de catering,…)
- Se requieren sólidas habilidades de organización, comunicación y de liderazgo de equipos.
- Se requiere disponibilidad para trabajar en horarios adaptados a los eventos, incluyendo noches, fines de semana y festivos. Flexibilidad y adaptación a los eventos, donde deberá estar presente.
