Today, NAB wholesales to select purveyors and offers seasonal retail service from a food trailer in Portland, Maine. Position Summary
The Pastry Sous Chef supports the Pastry Chef in overseeing daily pastry operations, ensuring the consistent preparation and presentation of high-quality desserts, breads, and baked goods. This role helps manage production, maintain kitchen standards, and support the training and development of pastry team members while ensuring efficiency, organization, and exceptional quality.
Key Responsibilities
Assist the Pastry Chef in managing daily pastry production and service
Prepare and produce desserts, breads, pastries, and baked goods according to established recipes and standards
Ensure all pastry items meet quality, consistency, and presentation expectations
Support supervision, training, and development of pastry cooks and kitchen staff
Help manage production schedules to ensure timely preparation and service
Maintain proper food safety, sanitation, and cleanliness standards in all pastry areas
Assist with ordering, inventory management, and ingredient organization
Monitor product quality and help minimize waste through proper preparation and storage
Collaborate with the culinary team to support menu development and seasonal offerings
Maintain an organized, efficient, and positive kitchen environment
Qualifications
Previous pastry experience required; supervisory experience preferred
Strong knowledge of baking techniques, pastry production, and dessert preparation
Ability to follow and execute recipes with accuracy and consistency
Strong attention to detail and commitment to quality
Excellent organizational and time-management skills
Ability to work in a fast-paced kitchen environment
Strong teamwork and communication skills
Passion for pastry, baking, and culinary craftsmanship
Physical Requirements
Ability to stand for extended periods of time
Ability to lift and carry up to 50 pounds
Ability to work early mornings, evenings, weekends, and holidays as needed
