The Executive Pastry Chef is responsible for leading the pastry and bakery operations, ensuring high-quality production, innovation, and timely supply for all hotel outlets and events. This role involves managing the team, overseeing food safety standards, and developing new menus while maintaining profitability and operational efficiency.
Candidates must have a technical degree in culinary arts and at least 4 years of leadership experience in pastry. Proficiency in advanced techniques such as sourdough, chocolate, and ice cream production, along with skills in product costing and food safety, is required.

Responsable de liderar la operación de pastelería y panadería, garantizando la calidad, innovación y abastecimiento oportuno de productos para los diferentes centros de consumo y eventos. Gestiona el equipo, los recursos y los estándares operativos del área, asegurando la eficiencia, rentabilidad y el cumplimiento de los requisitos de higiene y seguridad alimentaria.
Planificar, dirigir y supervisar la operación integral de pastelería y panadería, garantizando el abastecimiento oportuno de todos los centros de consumo, eventos y servicios gastronómicos del hotel.
Diseñar, desarrollar e implementar nuevas propuestas de productos, menús, postres, buffets y conceptos gastronómicos alineados con la identidad de cada outlet y las necesidades de eventos especiales.
Participar en la planificación, estandarización y mejora continua de los menús del hotel, asegurando la calidad, presentación, sabor y consistencia de los productos elaborados.
Liderar la selección, capacitación, desarrollo, evaluación y gestión del desempeño del personal de pastelería y panadería, promoviendo una cultura de excelencia, trabajo en equipo y crecimiento profesional.
Establecer y monitorear estándares, procedimientos y sistemas de control que garanticen la calidad, consistencia de las recetas, porciones, procesos de producción y especificaciones de compra.
Técnico en cocina
Experiencia de 4 años de experiencia en cargos de liderazgo en el área de pastelería
Conocimiento en preparación de mezclas en volúmenes medianos.
Conocimientos avanzados en técnicas de:
Hojaldrados, panes de masas madre, panadería típica y moderna.
Chocolatería, heladería y pastelería
Conocimiento de lineamientos de higiene y manejo de alimentos.
Manejo intermedio de herramientas informáticas.
Conocimiento en desarrollo y costeo de productos y manejo presupuesto
