Responsible for the overall operation of the kitchen, including the creation of technical sheets and management of food supplies. Ensures strict adherence to hygiene standards, budget constraints, and the quality of dish presentation and cooking.
The candidate must be able to manage kitchen budgets, optimize stock, and enforce HACCP food safety protocols. They are expected to minimize raw material waste and ensure the safety and cleanliness of the premises and equipment.
