Who we’re looking for

We are looking for a Chef de Cuisine to lead our hotel’s culinary operations! In this role, you will oversee all aspects of the food and beverage department, from menu planning and food preparation to staff training and banquet service. What you’ll be doing

  • Lead daily culinary operations by actively working scheduled AM/PM shifts and setting the standard for food quality, presentation, and service across all F&B outlets, including banquets and events.

  • Develop, train, and manage the food & beverage team, including hiring, scheduling, and performance management using systems like WORKDAY, COMPASS, and Shift Force.

  • Oversee menu planning and updates quarterly, ensuring alignment with cost control, current food trends, and Sonesta’s “Food is Art” standards.

  • Ensure compliance with health, sanitation, and safety regulations, including ServSafe standards, and maintain cleanliness in all kitchen and service areas.

  • Monitor and manage food, beverage, and labor costs, minimizing waste and coding departmental expenses to align with the hotel's budget objectives.

  • Maintain proper inventory and vendor relations, ordering through Avendra/iBuyEfficient and monitoring par levels for equipment, supplies, and décor.

  • Foster a culture of teamwork and excellence, leading with integrity while enhancing the guest experience and elevating the F&B service through ongoing training and team development.

The essentials

  • 3+ years of experience as a Chef or Sous Chef, preferably in a hotel or banquet/catering environment.

  • ServSafe Food Handlers certification required; TIPS alcohol service certification preferred or must be obtained after hire.

  • Strong leadership and team management skills, with a proven track record of training and motivating staff to deliver high-quality food and service.

  • Excellent knowledge of food safety, sanitation, and culinary techniques, including knife handling and professional cooking standards.

  • Proficient in Microsoft Office and inventory/order management systems, with the ability to manage food and labor costs within budget.
