About Yamagen & The Role:
Yamagen is a cool, casual izakaya drink and dine experience with formidable culinary discipline, new generation Japanese for the discerning diner, from market-fresh sashimi and intricate sushi to live fuel robata and a tantalising Omakase experience under the guidance of our Executive Chef Yamagen Melbourne - Head of Culinary Creative, Asian Cuisine for EVT, Yosuke Hatanaka.

We're looking for a motivated, talented Head Chef with a "team-first" attitude and a passion for culinary excellence to lead this high-energy, award-winning restaurant. If you've got the skills, creativity and dedication to make an impact at Australia's leading designer hotel brand, we'd love to hear from you.

Key responsibilities:
•    Direct, supervise and support the kitchen team to maintain high productivity and service standards at all times. 
•    Present food that consistently meets and exceeds guest expectations, anticipating and responding to guests' culinary needs promptly, and resolving any complaints or issues quickly and effectively. 
•    Ensure all food is stored, prepared and handled safely and hygienically, in line with OH&S guidelines. 
•    Ensure all sections and staff are fully prepared and ready for service. 
•    Recruit, train and develop kitchen team members, including regular performance reviews and appraisals. 
•    Liaise and communicate effectively with chefs, Food & Beverage Managers, Outlet Supervisors and other departments to ensure smooth day-to-day operations. 
•    Monitor stock rotation and control departmental expenses within set targets. 
•    Create and manage an effective departmental roster to meet financial and service targets. 
•    Stay across hotel and EVT policies, objectives and updates, and communicate these to the team. 
•    Report and follow up on incidents, injuries and hazards, ensuring corrective measures are taken. 
•    Act as a brand ambassador for the hotel and EVT, bringing creativity, passion and a positive, team-first attitude to the kitchen.

Experience/Skills:
•    3+ years' experience in a similar-style Japanese restaurant, ideally within a high-volume, high-energy kitchen. 
•    Strong knowledge of Japanese cuisine, technique and ingredients, with hands-on experience across sushi, sashimi and robata preparation. 
•    Sushi and sashimi mastery is advantageous but not essential — we're open to developing the right candidate. 
•    A collaborative, team-first leadership style, with the ability to coach, mentor and bring out the best in junior chefs.
