Overview
The cook assistant works under the direction of the Food Production Manager and Sous Chef and under the general supervision of the Department Director. Responsibilities include staying knowledgeable of current menus and recipes, exceeding service expectations for residents, co-workers, and guests. Adhering to all policies and procedures for RHS, this facility, local and state regulators. Complete all duties assigned by supervisors. Maintain a working knowledge of dietary restrictions and preferences of the clientele we serve. Shows respect to all customers, vendors, and co-workers with in the facility.

What you will do
  • Demonstrates competence in reading and following recipes, prep lists, food labels and menus. Accountable for ensuring proper resources (equipment, food supplies) to ensure positive resident/guest outcomes. Demonstrates a basic knowledge of weights and volume measurement and the use of all kitchen equipment. Demonstrates the competency to properly clean and sanitize equipment and work area.
  • Demonstrates positive interaction and support to all team members, to provide seamless, timely, and accurate meal service to the resident and guest. Demonstrates accountability for ensuring availability of information necessary to ensure positive resident/guest outcomes.
  • Demonstrates a basic knowledge to follow therapeutic menus and allergy guidelines, to ensure residents receive consistent quality nutritional care within their therapeutic guidelines and as ordered by the physician as well as provide for the safety of food served to all guests and team members.
  • Adheres to all food safety, infection control and sanitation regulatory compliance requirements as they pertain to Dining Services. Follows RHS and department policies and procedures. Exhibits safe food handling to include glove use, hair restraints, labeling, dating, temperature monitoring and food rotation to prevent cross-contamination or food borne illness.
  • Understands and is sensitive to the needs of our senior and other special needs populations throughout the community.
  • Utilizes supplies and equipment appropriately so as to minimize waste, breakage and loss. Communicates shorts before running out of product or supplies.
  • Works with Food & Nutrition management to prioritize work load and prep-lists to consistently serve food and beverage in a timely manner and complete a typical days assignments. Communicates proactively when assistance is needed to complete assigned tasks.

Qualifications

Education
  • High School Diploma or GED, (Required)

Experience
  • Prior food service experience, preferably in a healthcare facility (Preferred)

Licenses and Certifications
  • Allergen Awareness Certification - VA State - ANSI-approved Allergen Awareness certificate program within 180 Days(Required)
  • Food Handlers Card (FH) - VA State - ANSI-approved Food Handlers certificate program within 30 Days(Required) or
  • Food Protection Manager - VA State - ANSI approved Food Protection Manager Certification - VA State (Required)
