Sous Chef
Summary
The Chef's responsibility is to provide a smooth-running buffet style kitchen that serves high quality, tasty cuisine, on time, in a friendly and professional manner.
Pali Mountain's 250-acre alpine site is nestled in the heart of the San Bernardino mountains, 90 minutes from most of Southern California, regularly serving up to 700 guests per meal.
Pali Mountain has 3 business units: a summer camp, an outdoor school, and a conference center.
Meals are produced out of our 27,000 sq ft dining hall, which has one of the largest commercial kitchens in Southern California boasting state-of-the-art equipment and 5,500 sq ft of working space.
Chef duties and responsibilities, including but not limited to the following:
Prepare food to the specifications of the menu.
Cook and assist other cooks during the food assembly process.
Handle and cook proteins (meats) based on recipes.
Prepare any necessary sauces or accompaniments before service begins.
Estimate expected food consumption and proper portion control.
Adjust food items to accommodate guests with allergies or specific dietary concerns.
Assist in managing up to 11 staff in the kitchen.
Act as liaison to kitchen staff to ensure timely food service for all attending guests.
Operate various kitchen appliances such as ovens, grills, charbroiler, fryer, etc.
Maintain a minimum customer quality score and consistently strive to improve customer experience.
Ensure the kitchen is clean, organized and in spotless condition.
Manage and maintain inventory.
Keep track of food waste and report it to the Kitchen Manager.
Work with Kitchen Manager to improve training, recipes, and menu items.
Preferred years of experience:
2 - 3 years supervisory experience in food service.
2 - 3 years cooking experience, preferably buffet style restaurant.
Salary and Benefits
$22-28/Hourly

Pali Adventures is Southern California's premier, all-inclusive overnight summer camp. The camp hosts 300+ boys and girls ages 8 to 16 every week, from all over the United States and the world. Each camper chooses a weekly focus or "Specialty" from 21 incredible options (including Hollywood Stunts, Secret Agent, Movie Makeup, Acting, Dance, Flying Trapeze, Motor Sports and many more). They spend each morning in this specialty, making lasting friendships with other kids who share their interests. Campers come together for lunch, and then have free choice of over 70 fun elective choices for their 3 afternoon activity sessions. All of these options are included, from water sports to driving ATV's, with no extra fees. A Pali Camper can try it all - allowing for one of the most well-rounded summer camp experiences anywhere.
We are in many ways a traditional sleepaway summer camp experience - where kids have a chance to be technology-free and connect with the outdoors and each other. A very high staff to camper ratio of better than 3 to 1 ensures that each child is well cared for. Our staff is multicultural and international, as are our campers, giving kids a horizon-expanding experience of diversity. We are accredited by the American Camp Association, holding us accountable to over 250 health and safety standards. The ACA visit our camp every year and go over it with a fine-tooth comb - they inspect it so our parents don't have to! Parents can rest assured that Pali is an extremely safe and supervised place for your child, while still offering them the chance to grow and exercise independence by choosing their own adventure every day.
