POSITION SUMMARY:
The Kitchen Lead is responsible for all Kitchen operations. As the lead, your role is to oversee and run all aspects of the prepared foods day to day operation, ordering, cooking, rotating/date checking, inventory management, and crew development and training.
Responsibilities:
Hot bar presentation
- Making sure all recipes are followed.
- Making sure all items on hot bar are full and fresh throughout the day.
Batch and Cycle cooking
- Preparing small batches of food for fresher quality
- Cycle cooking chickens for time freshness
Ordering
- Responsible for all ordering in prepared foods. (all vendors, as well supplies from AWG, Warehouse, CES and Lapari)
- Maintaining par levels to keep products in stock
Rotating/Checking Dates
- Making sure all products are rotated, dated and code dates are checked. All shelves are cleaned as we rotate incoming orders
Inventory Management
- Thoughtful ordering to maintain par levels, in cooler, freezer and supply areas.
- Zero tolerance on out of code items that may lead to shrink.
- Maintaining order guides with inventory and par levels
Sanitation and Safety
- Train all new and current crew members to maintain the Tony's Standards in Temperature logs, chicken handling and cleaning.
- Following procedures on cutting gloves, Kevlar cutters and knife handling
- Servsafe Certificate
Schedule writing
- Responsible for writing and maintaining a schedule within budget hours
Qualifications
- Experience and passion in leading a team.
- Minimum 2 years' experience as Department Manager or team leader.
- Excellent communication including written, verbal, and listening skills.
- Knowledge in food handling and cooking.

Disclaimer:
Pay scale $16.60-23.54
The pay scale above is the hourly wage range that the Company reasonably expects to pay for this position.
*Manager roles have a bonus target potential paid out quarterly based on company results/metrics.
Within this range, individual pay is determined by location and other factors including,
but not limited to, specific skills, relevant work experience, and relevant education and/or training.
