COOK SUPERVISOR
RESPONSIBLE TO: Residence Coordinator Supervisor
FUNCTION:
To manage the operational aspects or food and nutrition services for people supported in the Intermediate Care Facilities, including but not limited to ordering food, working with Dietitian on menus, supervision of the cooks.
REQUIRED KNOWLEDGE, SKILLS AND ABILITIES:
Must have knowledge of sanitation, safety, and food preparation techniques. The ability to organize time well and manage multiple responsibilities effectively and in a timely fashion. Ability to communicate clearly and effectively, verbally and in writing. Reliability, adaptability, flexibility and a willingness and availability to work additional, non-scheduled hours in order to ensure meals provided as needed or assigned. Ability to successfully complete and maintain required in-service training. Physical condition commensurate with the demands of the job.
Valid driver’s license and acceptable driving record according to guidelines established by The Resource Center’s insurance carrier or equivalent accommodations required.
MINIMUM QUALIFICATIONS:
Associates degree and two (2) years custodial or housekeeping experience, a minimum of one (1) year of which was administrative/supervisory in nature; OR High school diploma or GED and four (4) years custodial or housekeeping experience, a minimum of one (1) year of which was administrative/supervisory in nature; OR an equivalent combination of training and experience sufficient to demonstrate ability to do the job. A valid driver’s license and use of personal vehicle or equivalent accommodations required.
SPECIFIC DUTIES:
SUPERVISORY:
1. Provides administrative supervision of assigned cooks, including but not limited to:
a. Discipline, performance evaluation, in-service education, training, development and support, time recording;
b. Provides orientation and training to new staff assigned;
c. Completes all required transactions in the Human Resources Information system such as employee change forms, time sheets or other personnel-related paperwork and documentation in a timely fashion.
DIETARY DUTIES:
1. Under the direction of the Residence Coordinator Supervisor coordinates the ordering of food supplies, ensuring an adequate supply to all ICF individuals with a nourishing, well-balanced diet, including modified and specially-prescribed diets.
2. Monitors purchasing of food/supplies to remain within established budget and within agency purchasing policies and procedures in conjunction with the Residence Coordinator Supervisor.
3. Provides training and assistance to all cooks in the areas of the TRC Dietary Manual ordering, following menus, and maintaining compliance with all applicable provisions of federal, state and local laws pertaining to health, safety and sanitation. Reviews dietary training on a regular basis and updates, as necessary.
4. Monitors food serving at all designated locations to ensure compliance with federal and state ICF Regulations for example: food must be served in appropriate quantity, at appropriate temperature, and in a form consistent with the dietary plan for the individuals.
5. Immediately notifies all Cooks, both Day Program and ICF, of dietary changes and verifies that the changes have been made.
6. Updates all changes on any forms that the Cooks to implement diets.
7. Performs the duties of the Cook when necessary to ensure the provision of food and nutrition services.
8. Perform any other duties as designated by supervisor or other administrative staff.
