What you’ll do:

The Brass Tacks

  • Plan, design, implement, and control all Food and Beverage operations, ensuring profitability, efficiency, and compliance with established standards.
  • Establish and maintain standards for food and beverage quality, presentation, handling, sanitation, and safety in alignment with property and regulatory requirements.

     

  • Develop and implement policies and procedures to ensure all work practices meet or exceed established standards.

     

  • Participate in the preparation of annual operating budgets and financial plans that support overall property objectives.

     

  • Establish and maintain budgeted supply and labor costs for Food & Beverage operations.

     

  • Conduct industry research to accurately project future trends and operational needs.

     

  • Partner with the Executive Chef on menu planning, pricing, and preparation.

     

  • Ensure the security of all F&B supplies, equipment, and inventory by establishing and enforcing security standards.

     

  • Partner with Columbia Hospitality to coordinate and execute pre-opening activities prior to hotel openings.

     

  • Maintain regular communication across departments to ensure all staff are informed of updates, changes, and operational needs.

     

  • Communicate with Food & Beverage Managers during service to ensure client and guest satisfaction.

     

  • Conduct frequent inspections of dining, kitchen, and storage areas to ensure all activities meet or exceed established standards.

     

  • Report unsafe conditions immediately and ensure all equipment is properly maintained, functional, and used as intended.

     

  • Participate in the property’s Manager on Duty program as needed.

     

  • Ensure timely, courteous follow-through on all client, guest, and team member requests.

     

  • Select, supervise, train, develop, schedule, discipline, and counsel staff while demonstrating leadership that empowers and inspires teams to achieve high standards.

     

  • Provide timely and formal assessments of individual team members in accordance with performance review policies and procedures.

     

  • Perform in the capacity of any supervised position as needed (based on qualifications).

     

  • Conduct and oversee training on job standards and areas of responsibility as required.

     

  • Performs other related duties and special projects as assigned by management to support departmental and organizational goals.

The Nitty Gritty

  • College or university degree with eight or more years of related experience; or equivalent combination of education, training, and experience.
  • Computer literacy in Point of Sale systems and sales/catering applications.
  • Strong working knowledge of fine dining and beverage service procedures.
  • Working knowledge of applicable liquor laws and regulations.
  • Familiarity with equipment used by the Food & Beverage team.
  • Required food handling permits, licenses, or certifications.
  • Ability to read, write, and understand English.
  • Strong communication skills, including the ability to write reports, business correspondence, and operations manuals; able to effectively present information to team members, managers, clients, guests, and the public.
  • Strong math skills including the ability to compute discounts, ratios, and percentages, and interpret data such as bar graphs.
  • Ability to create and maintain a team environment within and across departments.
  • Proficiency with Microsoft Office (Word, Excel, PowerPoint).
  • Strong general management skills: time management, information analysis, planning and organizing, decision-making, and problem-solving.
  • Financial management expertise including budget management, expense control, and P&L analysis.
  • Strong people management skills including coaching, motivating, delegating, scheduling, and relationship-building.
  • Understanding and application of labor and industry-specific laws and regulations.
