
The Sushi Roller & Garde Manger Cook plays a vital role in delivering an exceptional and refined dining experience at our country club. This position is responsible for the preparation, assembly, and presentation of high-quality sushi and cold kitchen offerings, including appetizers, salads, seafood, charcuterie, and composed cold plates. The ideal candidate demonstrates strong technical skill, attention to detail, creativity, and an unwavering commitment to culinary excellence, cleanliness, and teamwork.
Primary Responsibilities
• Prepare, roll, slice, and present sushi according to club standards, recipes, and presentation guidelines.
• Execute all garde manger items including salads, seafood preparations, charcuterie, canapés, dressings, and cold sauces.
• Maintain exceptional standards of product freshness, flavor, and visual presentation.
• Ensure all raw fish handling, storage, labeling, and rotation meet HACCP, health department, and club standards.
• Set up and break down sushi and garde manger stations efficiently for service and events.
• Maintain strict cleanliness and sanitation of all workstations, tools, and equipment.
• Monitor inventory, communicate prep needs, and minimize waste through proper production planning.
• Assist with menu development, specials, and seasonal offerings.
• Support buffet, banquet, and event production.
• Maintain professional grooming and uniform standards.
• Work collaboratively with all team members.
• Perform additional culinary duties as assigned.
Required Qualifications
• 1–3 years of experience in sushi and/or garde manger
• ServSafe Certification or equivalent
• Strong knife skills and seafood knowledge
• Excellent organization and time management
• Ability to work nights, weekends, and holidays
Preferred Qualifications
• Experience in private clubs or fine dining
• Formal culinary training
